Boneless and shaped (without skin and without the outer layer of fat). "Shoulder-Shaped" presentation obtain by pressing the piece, this type of presentation allows to get traditional slices and increases the performance of the piece. Block length varies depending on the weight of the pieces, The cut shows characteristic veins very valuable, intense color, offering a smooth texture after slicing.
